Moist Cakes Rule!

My family is not fond of frosting, like I am, so moist cakes that require no frosting are what really make them happy. Many of these cake recipes have been in my family for years, if not generations. I hope you will enjoy making these frosting-free cake recipes as much as I do. The best part about them is that there is no cooling necessary or work involved in frosting them! Of course, adding a bit of vanilla ice cream makes every cake better, if you ask me!


Wacky Cake

When I told my husband I was creating this page, he INSISTED I include the recipe for the wacky cake. This is his all-time favorite and he will bake it himself quite often just so he has it. This recipe came with him when I married him, I am not sure of its origin. If the way to a man's heart is through his stomach then my husband's is paved with wacky cake!

Ready in: 55 min
Yields: 12 (or one in my house!)

Ingredients

  • 3 c. Flour
  • 2 tsp. Baking Soda
  • 6 Tbsp. Baking Cocoa
  • 10 Tbsp. Vegetable Oil
  • 2 c. Water
  • 2 c. Sugar
  • 1 tsp. Salt
  • 2 tsp. Vanilla
  • 2 Tbsp. White Vinegar

Instructions

  1. Mix all ingredients.
  2. Pour into greased 9 x 13 pan.
  3. Bake at 350 degrees for 45 minutes.
  4. Cool and serve

Spice Cake Recipe

This recipe was given to my mother by one of her friends, Betty Ross, when I was around six or seven years old. Just finding this recipe brought back a surge of wonderful memories, not just of the delicious spice cake itself but of the Ross family. Her three sons and I were very close as children and I can see Betty Ross in my mind as if it were yesterday. Family recipes are treasures in more ways than one.

Ingredients

  • 3/4 c. Salad Dressing
  • 3/4 c. sugar
  • 2 -1/2 c. Flour
  • 1 tsp. Baking Soda
  • 3/4 c. Cold Water
  • 1 tsp. Baking Powder
  • 1/4 tsp. Salt
  • 1/2 tsp. Ground Cloves
  • 1 tsp. Cinnamon
  • 1/2 tsp. Nutmeg
  • 2 Tbsp. Molasses

Instructions

  1. Combine salad dressing and sugar.
  2. Sift dry ingredients.
  3. Add cold water and molasses alternately.
  4. Mix well.
  5. Bake at 350 degree oven for 30-35 minutes or until the edges begin to pull away and a butter knife inserted into the middle comes out clean.

Dump Cakes, Have you Heard of Them? - Toss Together and Bake

Dump Cakes are so simple to make, you just toss the ingredients into a 13 x 9 pan and bake. Let me give you an example

1 (21 oz.) can cherry pie filling

1 (18.25 oz.) package dark chocolate cake mix

1/2 cup butter, chilled

1/2 cup coconut (optional, but I love coconut!)

Preheat oven to 350 degrees and spray a 13 x 9 glass dish with cooking spray

Dump the cherry pie filling into the prepared pan and spread evenly.

Dump the cake mix over the top of the filling, evenly

Cut cold butter into 1/4-inch pats and place evenly over the cake mix

Bake for about 40 minutes, or until a knife comes out clean

  • 3 c. Grated Zuchinni
  • 2 c. Sugar
  • 1 c. Vegetable Oil
  • 4 Eggs
  • 3 c. Flour

  • 1 tsp. Baking Soda
  • 1 tsp. Cinnamon
  • 1 tsp. Allspice
  • 1/2 tsp. Ground Cloves
  • 1/2 tsp. Salt
  • 1 c. Chopped Walnuts (or pecans)
  • Raisins to Suit (optional)

Instructions

  1. Grease and dust angel food pan with flour.
  2. Place in middle rack in oven.
  3. Bake for 1 hour at 350 degrees.

Fruit Cocktail Cake Recipe

This is another odd sounding cake but if you think about fruitcake, it isn't really such a fetch, is it? Besides, I guarantee you they won't be sending this one back to you! A fresh tasting, moist cake sure to please and unique enough to make a great statement at any gathering.

Ready in: 55 min

Ingredients

  • 1 -1/2 c. Sugar
  • 2 c. Flour
  • 2 tsp. Baking Soda
  • 1/2 tsp. Salt
  • 2 Eggs
  • 1/2 c. Chopped Nuts
  • 1 20 -ounce can of fruit cocktail -- do NOT drain
  • 1/2 c. Sugar
  • 1/2 Stick Butter
  • 1/4 c. Evaporated Milk
  • 3/4 c. Coconut

Instructions

  1. Mix first seven ingredients well.
  2. Bake 45 minutes at 325 degrees.
  3. While baking, mix 1/2 c. sugar, butter and evaporated milk in a sauce pan.
  4. Boil for 2 minutes.
  5. Stir in coconut.
  6. As soon as cake is removed from the oven, pour this coconut mixture on top of the cake.

Tomato Soup Cake Recipe

Yes, tomato soup cake is a real cake and, yes, there really is tomato soup in the recipe! Not to worry, it doesn't taste at all like tomato soup. The tomato soup just adds moisture to this cake and its signature color. Sure to be a huge hit-- just don't tell them what the name is until after the eat some.

  4. Stir in vanilla, raisins and nutmeats.
  5. Bake for 45 minutes at 350 degrees.
